Very dark and firmly tannic, it is most often used in small amounts to add backbone to a blend.

In its Bordeaux homeland it is typically blended into Cabernet Sauvignon and Merlot at just a few percent, contributing colour, tannin and spice. It ripens late and may not reach full ripeness in cool years. In Japan it is grown in Yamanashi and elsewhere, mostly for blending, though single-variety bottlings also appear. Its firm tannin is easier to enjoy alongside rich, fatty meat or slow-braised dishes.
