The liquor-sales notice lists the licensed premises as "Kiritouyama Fruit Wine Works Direct Sales Shop, 627 Hora, Shimonishijo, Shiojiri, Nagano". A small winery at the foot of Mt. Kiritouyama in Shimonishijo, Shiojiri, Nagano, founded in January 2019 by Hiroyuki Tokunaga, a graduate of the first Shiojiri Wine University class. Working by hand without additives or filtration, it uses Shiojiri-grown Pinot Gris, Merlot, Concord and Niagara, estate-grown yamabudo varieties (Shokoshi and Iwamatsu) and Muscat Bailey A grafted onto old vines in an abandoned vineyard. Its Ringo Bihappo cider ferments several apple varieties on the pulp with wild yeast for twelve months.
