Central Italy's signature red grape, usually giving a firmly acidic red wine that sits well alongside food.

It underpins famous central Italian wines such as Chianti and Brunello di Montalcino, and is regarded as the most widely planted red grape in Italy. Cherry and dried plum aromas combine with firm acidity and medium tannin, making it a wine that shows better with food than on its own. In Japan it is scattered in small plantings, with Nagano the main centre and further growers in Yamanashi, Hyogo, Kagawa, Fukuoka and Oita. It is well known as a match for tomato-based cooking, from pasta and pizza to slow-braised dishes.
