Chateau Knot is a winery that began by reclaiming abandoned farmland in the mountainous area of Noto, on the Noto Peninsula. It is operated by Wine A Co., Ltd., established on September 20, 2022, with Yukimichi Oyanai as president, together with four members of the Oyanai family and one dog. The AKATSUCHI-1 vineyard covers 0.7 hectares and has grown five varieties since March 2022, with an additional 100 Cabernet Franc vines planted in March 2024. The grapes are hand-picked and hand-destemmed, then fermented with native yeast with support from contract producer SAYSFARM; the winery plans to move to in-house production in the future.
