A family-run winery in Noboricho, Yoichi, Hokkaido, opened in 2012. Seven French varieties are interplanted in its high-elevation vineyard and co-fermented as field blends with wild yeast and no filtration. A roughly 100-year-old Sapporo soft-stone warehouse was relocated to serve as a semi-underground cellar, and pomace from the 11-hectare property is fed to livestock as part of an on-site nutrient cycle.
