BLUE WAX WINERY is an urban winery that opened in Matsuyama, Ehime Prefecture, on December 2, 2025. The owner is Kimura. It makes original wines from grapes supplied by contracted farms and serves them alongside wines from across Japan. Its restaurant offers food pairings using selected ingredients from Ehime and other regions. It also began growing grapes in four areas of Japan and aims to make wine exclusively from its own vineyards within five years.
