A high-acid white grape made in every style from bone dry to sweet and sparkling.

The grape behind Vouvray and Savennières in France's Loire valley, celebrated for yielding dry, sweet and sparkling wines from the same fruit. Its acidity is high and long-lasting, so even sweet versions stay lively, and with age it develops honey and quince aromas. In South Africa, where it is simply called Chenin, it is the most widely planted variety of all. In Japan it centres on Nagano, with further growers in Okayama, Gunma, Fukuoka and Hokkaido; that acidity makes it a good match for fried food and vinegared dishes.
