A cold-hardy variety descended from wild yamabudo, usually making a deeply coloured red with firm acidity and spicy, savoury notes.
Yamasachi is a black grape bred at the Ikeda Town Grape and Wine Research Institute (Tokachi Wine) in Hokkaido, using wild yamabudo as one parent. It was developed to survive severe winter cold and is grown mainly in the Tokachi region of Hokkaido. In 2020 it became the third Japanese variety registered with the OIV (International Organisation of Vine and Wine), after Koshu and Muscat Bailey A, allowing its name to appear on wines exported abroad. It inherits the strong acidity and deep colour of yamabudo, often showing spicy and earthy notes, and is frequently paired with lamb or slow-cooked dishes.
