The grape of Beaujolais, low in tannin and light enough to serve chilled.

The signature grape of Beaujolais in eastern France, known in Japan above all through Beaujolais Nouveau. Fermented in whole bunches it develops exuberant aromas of strawberry sweets and banana, and its light tannin means it can be served chilled. In the better Beaujolais sites it also makes tauter reds built to age. Plantings in Japan are very limited, currently in Nagano; the wine goes well with cured ham, roast chicken and, in Japanese cooking, grilled fish in a sweet-savoury glaze.
