Deeply coloured yet light in tannin, it tends to give a juicy red with lively acidity.

Long grown alongside Nebbiolo in Piedmont in north-west Italy, it is deeply purple in the glass but gentle in tannin. That restraint lets its acidity show, and together with juicy fruit it makes a wine that is easy to keep drinking. At home in Italy it has always been an everyday table wine rather than a special-occasion one. Plantings in Japan are very limited, with small amounts grown in Aomori, Niigata, Yamanashi, Hyogo and Kagawa; its light tannin suits both rich dishes and home cooking seasoned with soy sauce or miso.
